I recently had my kitchen renovated and now that everything is clean and new, I have a newfound enthusiasm to bake/cook non stop. Just being in the space gives me so much joy.

Scrolling through instagram brought me to these berry pie bars. It was meant to be cherry pie bars but seeing that we didn’t have any cherries, it became berry pie bars instead when I found a huge bag of frozen blueberries and strawberries in the freezer.

Recipe

Ingredients

  • 3 cups all purpose flour

  • 3/4 cup + 1/2 cup sugar

  • 1 tsp baking powder

  • 1 1/2 tsp cinnamon

  • 1/4 tsp salt

  • Zest and juice of 1 lemon

  • 225g of cold unsalted butter

  • 1 large egg

  • 2 tsp vanilla extract

  • 4 cups blueberries/strawberries

  • 4 tsp cornstarch

Method

Preheat your oven to 190 degrees. Line a 9” by 13'“ pan with baking paper (so that it doesn’t stick).

In a large bowl, mix together flour, 3/4 cup of sugar, baking powder, cinnamon salt and lemon zest. Add the butter, egg and vanilla extract. If you have a food processor, pulse all the ingredients until crumbly. If you’re like me, use a fork to kind of cut the butter up and mix all the ingredients together. After awhile, just get your hands in there and kind of rub all the ingredients together until you get a crumble.

Pat half of dough into the bottom of the pan, leaving the remaining dough for the topping. In another bowl, mix the berries (you can use either fresh or frozen berries), 1/2 cup sugar, cornstarch and lemon juice. Then sprinkle the berries evenly over the crust. Crumble remaining dough over the berry layer.

Bake in preheated oven for about 45 minutes, or until top is slightly brown. Cool completely before cutting into squares. Store in an airtight container.
