Last night my partner told me she wanted pancakes so I gave her the recipe and today we have pancakes! This is the first time she has made pancakes all by herself and the joy on her face when she tasted that first pancake that came piping hot from the pan was immense. Reminded me of my own joy every time something I made turned out well and I’m glad that today, she was able to experience that herself too.

Breakfast pancakes are one of the most versatile breakfast foods. I love making thin pancakes, pairing them with sweet toppings like blueberries, honey/maple syrup or sometimes when I’m in the mood, savoury things like bacon, hash-browns, sausages. Thin or thick this recipe is simple and easy and only requires basic pantry staples.

Recipe

Ingredients

  • 1 cup flour

  • 1 cup milk

  • 1 egg

  • Salt

  • Butter

Method

Whisk flour, milk and egg in a bowl. Add a pinch of salt and mix well. If you like, you can add blueberries or chocolate chip into the mixture for added flavour. Melt some butter in a pan and then ladle the batter forming a nice round pancake. Wait for about 1min and flip the pancake. Cook until golden brown and serve with maple syrup.
