This dish is one of my favourites when it comes to lunches in the CBD. Fast and at $10 a bowl, it makes for a good option. Since I started working from home (way before the circuit breaker started) I haven’t had a good pork belly don in awhile so when I saw the leftover pork belly shabu shabu in my fridge today, I decided to make this quick meal. This goes into the books for one of those one pot one bowl dishes so lazy people like myself have less washing up to do.

Ingredients
1/2 big yelow onion sliced
250g pork belly shabu shabu
1 packet of dashi (mixed with 1/2 cup of water)
4 tbsp soy sauce
4 tbsp cooking sake
4 tbsp mirin
1 tsp sugar
Chopped spring onions (to garnish)

Method
Pour the dashi, soy sauce, mirin, cooking sake and sugar into your pan and stir it until combined. Add your pork belly and sliced onions and mix it around so that it soaks up all the lovely sauce. Test as you go along and if the taste is too strong, you can always add some water to it. Leave it to simmer in your pan for about 10-15 minutes. Serve over rice and garnish with chopped spring onions and Shichimi Togarashi if you have some lying around.
