Luncheon Pork Fried Rice
Who here loves leftovers? Well, we do.
The best part about leftovers is really the rice, because mum would fry up the most amazing fried rice with luncheon pork. We as a family love this dish so much that we purposefully cook an additional serving each for dinner so that we'd have leftover rice for fried rice the next day. When that happens, I guess you can't really call it leftovers, but whatever it is or should be called, it's simple comfort food. It's the food you think of when you're 10,000 miles away and are missing home. It's the food no one else but your family understands just how good this is. It's the food you love.
Recipe
Ingredients
- 1 pip of garlic
- 2 shallots
- luncheon meat
- egg
- soy sauce
- pinch of salt
- carrots/long beans
- leftover rice
Method
- Cook the luncheon meat in pan and use spatula to break it up into smaller pieces. When its almost fully cooked, add in the egg. Take it out when its cooked and put it aside.
- Heat oil in wok. Add in garlic and shallots and fry until aromatic. Add in rice and mix well.
- Then add the soy sauce and salt, carrots/long beans or whatever else you would like in your fried rice along with the luncheon meat and egg that you have prepared earlier.
- Stir fry and break the luncheon meat and egg into smaller pieces.
- Serve with some cucumber on the side or with some spring onions as a garnish.
